One of the few things you won’t be able to find at Walter Stewart’s Market in New Canaan is a rookie butcher.
“All of us here have multi-year experience – our team has a combined 134 years” says Richard Pinto, the meat and seafood manager at Stewart’s. “This is what we are trained to do. Carlos and Joe together have 40-plus years experience working for Walter Stewart’s. And Mike, a familiar face at South Avenue Butcher, who recently joined our team, has over 40 years as a professional butcher.”
Pinto, who honed his skills in Manhattan at his family’s prime butcher shop (Empire Purveyors), says the quality of Stewart’s meats makes them an ideal choice for holiday meals.
“We buy the best of the best,” he said. “And we hand-select all of the meat.”
That includes two of the most popular dishes served at holiday meals: Prime rib and beef tenderloin. Like all of Stewart’s red meats, the prime rib and tenderloin are Certified Angus Beef, a distinction reserved for less than 1.5% of the country’s beef.
“Our method of trimming (cutting off fat) separates us from other stores,” says Pinto. “The meat is ready to go straight into the oven. Mike, Carlos, Joe, Steve and I take the craft of meat-cutting seriously and we are here to custom cut, tie, and trim to your specifications. We offer full-service.”
The butcher department at Stewart’s offers a wide range of other superior holiday meats, including hams from Nueske’s, a Wisconsin-based specialty supplier whose artisan hams are smoked over applewood embers for 24 hours.
Also available at Stewart’s are lamb and pork crown roasts and French racks of lamb or pork from Leidy’s and other high-quality suppliers.
“We also have great poultry options and some other items like wild boar roast and venison medallions that can be hard to find,” said Pinto.
Another rarity offered at Stewart’s is Petrossian caviar. Known for its robust flavor, Petrossian is considered the Rolls Royce of caviars. “It’s the creme de la creme from the best caviar purveyor in the world, and we are the exclusive retailer of Petrossian Caviar in our region,” said Pinto. “We do prefer that people order ahead when they want Petrossian.”
In addition, Stewart’s has a vast selection of cheeses — local, artisanal, and importered. “The cheeses are sourced from special cheese manufacturers and cut here in the shop,” said Pinto. “Most of our cheeses are award winners that you won’t find in a lot of places.”
Then there is Stewart’s seafood. “It’s delivered daily from our trusted local supplier,” said Pinto. “On order we can get just about any fish that someone is looking for.”
Stewart’s large in-store stock means that most meats, poultry, and cheeses are readily available. Customers may also pre-order items.
“For small or big holiday gatherings, we can get you all set,” said Pinto. “It can be a busy, stressful time of year, so Stewart’s wants to make sure you have what you need if you are hosting a party.”
